Oh, what a time to be alive! I’ve been saying that since like 2019 whenever something just off the wall happened as a mix of “well, what the hell?” and a “thank god we’re okay/it’s not worse” vibe to it.

What does that have to do with the bowl of food I’m holding in the picture?

Well, nothing. Lol.

About a month back, I made homemade chipotle burrito bowls. Twice for me, once for my guy. Because I made more than I needed to for one serving, because that’s just how I cook. I digress, it turned out FANTASTIC. I felt better than I do eating actual Chipotle (no shade), which food is all about feeling right? The warm and fuzzies or the heartburn? You make your food choices based on those two things. Okay, more than those two things.

Anyway, I pulled off the chicken thanks to the chile lime spice blend from that gifted me earlier this fall. Like all of their spices, it took this up a notch.

Anyway, there’s not much of a recipe to this. I just pan seared my chicken, as well as some onions and peppers, seasoned a can of beans, added some lime and cilantro to my rice, made a corn salsa from jalapeño, red onion, cilantro, and corn, andddd made my guacamole recipe (sans tomato) that can be found on MaryMangia.com.

Okay, in my efforts to preserve the sanctity of Thanksgiving celebration in the month of November, I’m sharing my Thanksgiving stuffing recipe! I love stuffing mostly when it has soft, flavorful bites mixed crunchy outside pieces and then that snap of celery. Ughhhhh call me Britney because, “Gimme gimme more.” While green bean casserole is my favorite, I love stuffing as a side every year. Shifting gears from my typical recipe feed posts to look back on some of my favorite Halloween costumes! I personally love dressing up for Halloween and having some creativity behind a fun holiday. What are you dressing up as this year? Here’s some of my favorites:

- Snow White: I think I was 3 years old here and dying for candy.
- Guy Fieri: I have gone as Guy twice (2017 and 2019) and it’s been my best costume of all time.
- Dorothy from Wizard of Oz: I think I was 6 years old here, and essentially just wanted the red sparkly shoes (cut off due to crop!)
- Mary Poppins: I went as Mary in 2013 (and I think again in 2014?) and it was such a fun costume!
- Hipster Princess Ariel: The red wig and general ennui, though. This was 2015!
- Netflix & Chill: I went as this during peak “Netflix and Chill” era (2015 again lol) as a tongue in cheek costume lol.

I wanted a breakfast sandwich, so I made a breakfast sandwich.

I get on a breakfast kick sometimes. I just can’t get enough of a breakfast sandwich or skillet that I end up making it over and over again.

Truth be told with this whole “chillin’ out on gluten/carbs/sugar thing,” I was fine relinquishing bread. Bread and I are like that random person you only see once every like 3 years and you like them, but you also know nothing about them. Well. This week I needed an English muffin and finally decided to venture with these Mikey’s ones. And the texture is mostly good! Def scratched the craving itch, I’ll say that.

Today’s breakfast sandwich had vegan cream cheese, breakfast sausage links, peppers and onion, a little slaw, raw red onion, and a whole bunch of habanero hot sauce. Magnifique!

Tonight, I kept it simple. It’s been a blast to try new recipes, explore take out and eating out with some new ideas around food and health. But alas, tonight I just wanted some chicken nuggets. I paired with “veggie pasta” style vegetables, and it was spectacular! I have the easy recipe below:
- dredge bite-sized chunks of chicken in egg, and coat in seasoned almond flour...I use garlic powder, onion powder, dried parsley, salt, pepper, and a little cayenne.
- air fry or bake your chicken nuggets in batches until the internal temperature is at 165 or higher, and exterior is golden and crispy. I put mine in the air fryer for about 8-10 mins each at 400 degrees.
- serve over your favorite vegetables sautéed in 2 tbsp of olive oil, garlic, salt, pepper, onion powder, garlic powder, and a dash of cayenne.

I love simplistic, veggie filled meals as spring begins to erupt. Perfect for the first full week of spring, I made this gorgeous spring vegetable couscous - preparing Israeli couscous with olive oil sautéed with zucchini, bell peppers, onion, garlic, lemon, with a dash of salt, pepper, cayenne, and turmeric. There isn’t much recipe to it, honestly! It’s that easy. I also made some quick homemade air fried panko chicken nuggets and drizzled it with Trader Joe’s Island Soyaki sauce. I made big batches of each, so I can mix and match throughout the week for lunches and dinners. I love a versatile meal for spring and summer, something that feels light, but is filling and savory. What are you most looking forward to as we enter a new season?

Happy St. Patrick’s Day!! ☘️ Or Paddy’s Day...it’s always Paddy not Patty 😉 Today, I’m grateful to be Irish. My dad came over to the U.S. from Ireland in the 80s, and then met my mom and the rest is history. I loved sharing some of my heritage and history with all of you this month and hope your day has been filled to the brim with curry, stew, vegetable soup...or Guinness and whiskey 🤣🥰

Take a look at this photo of my dad and I the 90s before the Southside Irish Parade...my hair all curled up for Irish dancing, totally establishing my dislike for parades. I’ve also included a few of my favorites from our last visit in 2018. Can’t wait to go back!

If you’ve been following me for some time, you probably have seen how close I am to my dad and family. My dad has his own story highlight where you can check out his shenanigans, but more than anything, I’m proud to be his daughter.

On another note, it’s a privilege to be who I am today, thanks to the parents that raised me. With everything going on in our world, seemingly filled with discrimination for people that are different from those who live in hateful bias, it’s important to advocate for others and amplify voices who may not have the same advantages. Being Irish, being an immigrant’s daughter has taught me just that. ❤️ My heart, my passion for change is with all those who are hurting today and everyday due to the -isms that infest our world. I hope we can all heal.

Believe it or not, I didn’t like Irish beef stew growing up. I would often groan when my mom or dad would announce that stew was on the menu for dinner. BUT, as an adult? I love it, adore it, and see it as a delicious bowl of ✨beefy✨ comfort.

This year, I actually attempted to make stew on my own for the first time with the help of my mom’s guidance! Our Irish beef stew is definitely different than most. We take a bit of my mom’s Italian side by adding tomato sauce and add a bit of heat with jalapeno. I know, I know…jalapeno…in Irish Stew? Trust me on this. My Irish dad – and even my Irish family – we all love spicy food! The jalapeno adds a savory kick, a little bit of acid and heat to a comforting bowl of stew.

Not only did I make this classic dish on my own for the first time, I also took the time to learn more about Irish history this month. It’s been really eye opening to look at the history of Irish food and culture and how it’s played a role in the way we are today. I learned that back in the day, stew was a necessity for the poor to nourish themselves. Being able to take a piece of mutton, potatoes, and onions in a pot to serve your whole family was essential hundreds of years ago. This evening, I shared the 1 minute synopsis of Irish history and how curry became a favorite for the country. I absolutely love Irish curry as a comfort meal, and I serve mine up with rice and “chips.”

whenever I visited Ireland, you could walk into basically any pub or restaurant (or even SuperMac’s after a late night) and grab Irish curry!
