There’s something about spring that calls for a little home baking! 🍏 🧑🍳 These easy apple crumble muffins are perfect for lunchboxes, morning tea or enjoying warm with a cuppa.
You’ll need:
2 apples, peeled and diced
2 cups self-raising flour
½ cup brown sugar
1 tsp cinnamon
1 egg
1 cup milk
100g butter, melted
For the crumble:
¼ cup flour
¼ cup brown sugar
½ tsp cinnamon
30g butter
To make:
Mix the flour, brown sugar and cinnamon in a bowl. Add the egg, milk and melted butter, then gently fold through the diced apple.
Spoon into a greased or lined muffin tin.
For the crumble, rub the butter into the flour, sugar and cinnamon with your fingertips, then sprinkle over each muffin.
Bake at 180°C for around 20–25 minutes, or until golden and a skewer comes out clean.
Best served slightly warm and if one accidentally gets eaten before they’ve cooled properly, we completely understand. 😉
