Given the literal and metaphorical heat inside a restaurant kitchen, it would seem to be a perfect crucible for drama. So it's surprising that there hasn't been a top-flight restaurant-centred show – ok, Bob's Burgers aside – until this June, when Hulu production The Bear premiered in the US and quickly became the breakout hit of the summer. In a star-making performance, Jeremy Allen White plays the fine-dining chef returning from New York to his native Chicago to take over his family's sandwich shop following the su***de of his brother. But as he tries to revive its fortunes, he comes into conflict with the joint's long-standing staff, as does his new hire, keen young sous chef Sydney (Ayo Edebiri). Altogether, it makes for the very opposite of comfort TV, both tightly wound and exhilaratingly kinetic – as well as mouthwatering, for carnivores at least, with its depiction of Chicago's famous beef sandwich, among other things. Asked whether one should consider social and economic factors when assessing the impact of small hydropower, such as the needs of remote communities in the Alps, Christine Weber, a river ecologist at the Swiss Federal Institute of Aquatic Science and Technology (Eawag), says: "That is a difficult question. I tend to say that a case-by-case assessment is needed where the bigger picture is looked at," meaning, the ecological impact on the whole river basin.

A 2018 review by Weber and others analysed evidence on this basin-scale impact, which can include sediment clogging the stream bed, a poorer habitat for fish, and a negative effect on fish populations. According to the review, the small hydropower boom is "exacerbating ongoing habitat fragmentation and degradation, and further fuelling biodiversity loss".

We were nearing the end of the journey, and the train slowly descended to the sleepy, terracotta-roofed town of Hali Ela to terminate at the city of Badulla in the lower central hills.

As we pulled into the station, I realised that despite having travelled extensively around the world, I've often felt happiest during this slow journey through my own country. In many ways, as the train snakes past the century-old tea bushes, British stations and settlements of tea-estate communities, it quietly reveals the story of an island to those willing to put down their phones and look for it.

"Surrealism is no longer an art movement but an attitude toward art and design," says Mateo Kries, director of the Vitra Design Museum, Germany, receptacle for many of the most important Surrealist artworks. That attitude is clearly at work at the exhibition Strange Clay, at London's Hayward Gallery. Among the contemporary artists using "clay in an unexpected way" are David Zink Yi, whose giant alien squid (2010) sprawls in a glossy pool of ink; Japanese artist Takuro Kuwata's candy-coloured Yeti-like creatures; and Lindsey Mendick's kitchen infested with ceramic slugs and cockroaches.

Viewing Klara Kristalova's botanical scene, Camouflage, that is installed there is like wandering through a Grimm's fairytale glade. Ceramic figures, often adolescents with exaggerated features, morph into weirder states – such as Wooden Girl, trapped inside a tree stump, with twiggy hands; or a boy in street gear with a horse's head. The artwork was inspired by the view behind her house near Stockholm: "It's a forest full of my abandoned sculptures," the artist tells BBC Culture. "With time, they change, disappear and seem to grow anew. I find that to be a good metaphor for life."

"That was part of my fear, and we thought about it a lot," says Johnson of compiling Objects of Desire. "There is a risk [displaying these objects] you create a 'new norm'." To invoke surprise – a feeling of "seeing with new eyes" – they worked hard on the relationship between displayed objects, such as placing de Chirico's Arrivo del trasloco (c 1965) next to a contemporary artwork by Alicja Kwade: "They both offer pin-sharp convincing depictions of reality… But when you look again, you see them in a different light… they can seem unstable, more fantastical than you first thought. Surprising juxtapositions is something the Surrealists tried to create," she says, recalling their "assemblages" – ideas sparked when joining otherwise unrelated items, just as William Burroughs and David Bowie used the "cut-up" technique of writing to create surprising sentences.

Over decades or hundreds of years, some of the dinosaurs that died in the area ended up being washed into a nearby river or lake. "But the sediment was winnowed away in such a way as to concentrate these bones and teeth into these little discrete deposits," says Druckenmiller.

A number of the dinosaurs identified in silt from sites along the Colville River have been found nowhere else, such as Ugrunaaluk kuukpikensis, "ancient grazer" in the local Inupiat language – a kind of hadrosaur. Of course, this doesn't mean they won't be eventually, and it doesn't necessarily prove that they had any special adaptations to the cold either. But it's promising.

It was late at night on 15 November 2019, on the Samoan island of Upolu – a tiny jade-green splodge in the Pacific Ocean, somewhere between Hawaii and New Zealand. Government officials were rushing to attend a meeting in the sleepy harbourside capital to discuss an urgent public health issue. By the end of the evening they had declared a state of emergency, with immediate effect.

Three months earlier, a member of the public had developed a characteristic red-brown blotchy rash after arriving on a flight from New Zealand, where there was an ongoing measles epidemic. They were swiftly diagnosed as a "suspected" case, but no further action was taken.

"These spaces have the potential for health, not just the health of the ecosystem but for the people who might visit." Italian designer Paola Navone has an impeccably avant-garde pedigree. In the mid-1970s, she was a member of the experimental Italian collective, Studio Alchimia, which debunked what it considered to be tired tenets of modernism, such as its emphasis on rationality and streamlined forms. It should come as no surprise then that Navone's home in Milan is thoroughly idiosyncratic. It has a new metal roof which Navone had installed after the original one was destroyed by a fire. Navone has painted white spots on a black iron staircase, while a tree trunk painted with white stripes penetrates a staircase, then protrudes through a mezzanine. Her rejection of traditional good taste is most dramatically expressed in her bedroom, where a shower unit is encrusted with ceramic vessels, many of them entire vases, urns and dishes, an effect that wittily subverts the conventions of bathroom decoration.
