🍂 **A Little Taste of Fall!** 🎃

Nothing says fall quite like the smell of freshly baked pumpkin muffins! Soft, moist, perfectly spiced, and absolutely delicious with your morning coffee. ☕🧡

**🎃 Easy Pumpkin Muffins**

**Ingredients:**
- 1¾ cups all-purpose flour
- 1 cup pumpkin purée (not pumpkin pie filling)
- ¾ cup brown sugar
- 2 eggs
- ½ cup vegetable oil
- ¼ cup milk
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 2 tsp pumpkin pie spice
- 1 tsp cinnamon

**Directions:**

1. Preheat oven to 350°F and line a 12-cup muffin pan.
2. In a large bowl, whisk together pumpkin, brown sugar, eggs, oil, milk, and vanilla.
3. In a separate bowl, combine flour, baking soda, baking powder, salt, and spices.
4. Gently fold dry ingredients into wet ingredients until just combined.
5. Divide batter evenly among muffin cups.
6. Bake for 20–24 minutes, or until a toothpick comes out clean.
7. Cool slightly and enjoy!

Creamy Chicken & Wild Rice Soup
A warm, hearty dinner that’s perfect for a cool fall weekend!
Ingredients
- 1 lb chicken breast, cooked & shredded
- 1 cup wild rice blend
- 1 small onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 tsp garlic powder
- ½ tsp thyme
- Salt & pepper
- 1 cup heavy cream or half-and-half
- 2 Tbsp butter
Directions: Sauté onion, carrots and celery in butter until softened. Add broth, rice and seasonings. Simmer until the rice is tender, then stir in shredded chicken and cream. Heat through and serve with warm bread.
🍁 Friday Fall Tip: Make a double batch — this one is even better for lunch the next day!
