It's been way too long since I've seriously baked something, and yesterday was the day to revisit this passion. Shike is very supportive of my baking endeavors and encourages me to do more. He's such a good cheerleader always offering creative suggestions and he's also an excellent taste master 😋
When Phil was alive, I found great comfort and baked quite often. Baking always takes me back to my southern roots of enjoying the deliciousness of cakes and pies baked by my grandmother, her sisters and my Aunt Hallie (Jones) Snead. Mema would always bake a variety of cakes such as carrot, chocolate and strawberry. But my personal favorite was always coconut 🥥 cake, pie or anything coconut. This would be the one she would always make for my birthday 🎂
Her sisters, Aunt Annie and "Sister" aka Eugenia would make the best pies along with the scrumptious fruit pies from Aunt Hallie. Aunt Annie's chocolate pies would be my favorite pie 🥧 then and now 😋 Each of these strong southern women left an impact on me as a child and proudly continues into adulthood.
Baking, brings back these warm memories of those days long gone, but never to be forgotten. Last night's carrot 🥕 cake surely did not disappoint 💞 I've ventured away from older recipes and like adding a cheesecake layer in between. It makes the cake exceptionally moist and flavorful.
