1 can (20 oz) crushed pineapple, drained
1 package (3.4 oz) instant vanilla pudding mix
1 1/2 cups sweetened shredded coconut

Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/3 cup sugar
6 tbsp unsalted butter, melted
For the Cheesecake Mixture:
4 (8-ounce) blocks cream cheese, room temperature
1 cup granulated sugar
1 cup sour cream
1 tsp vanilla extract
4 large eggs
2 tbsp all-purpose flour
1/4 cup raspberry puree
For the Raspberry Swirl:
1/2 cup raspberry puree
2 tbsp sugar
For the Topping:
Whipped cream
Fresh raspberries
Powdered sugar for dusting
Directions:
Crust: Combine graham cracker crumbs with sugar and butter. Press into the bottom of a 9x13 inch pan. Chill in the fridge.
Cheesecake Mixture: Beat cream cheese and sugar until smooth. Mix in sour cream and vanilla. Add eggs one at a time, then fold in flour.
Assembly: Pour cheesecake mixture over crust. Dollop raspberry puree on top. Use a toothpick to create swirls.
Bake: Preheat oven to 325°F (163°C). Bake for 35-40 minutes. Let cool, then refrigerate for at least 3 hours.
Topping: Pipe whipped cream on top, add a raspberry, and dust with powdered sugar before serving.

Best Broccoli Salad Ever 😋😋🥗
Ingredients:
• 2 heads of fresh broccoli (not frozen)
• 1/2 cup chopped red onion
• 1/2 pound bacon
• 1 1/2 cups cheddar cheese, grated (For better texture, I prefer using a block of cheese and grating it myself instead of opting for pre-grated options.)
• 2 1/2 tablespoons vinegar
• 1 cup mayonnaise
• 1/3 cup sugar
Instructions:
1. I cut the bacon into bite-sized pieces and cook it until it reaches the desired crispness. After cooking, I drain the bacon on paper towels.
2. I chop the broccoli florets into bite-size pieces and mix them with the bacon, chopped onions, and grated cheddar cheese in a large bowl.
3. In a separate bowl, I blend vinegar, sugar, and mayonnaise. I then pour this mixture over the broccoli combination and toss everything to ensure thorough coating. Afterward, I cover the bowl and refrigerate it until I'm ready to serve.
Notes: To slightly soften the broccoli, I usually steam it in the microwave for about 2 minutes. For this, I place the broccoli in a microwave-safe bowl, add approximately 1/2 inch of water to the bottom, cover it with a paper towel, and microwave for 2 minutes. This recipe is equally delicious even without the cheese!

- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- Cream cheese frosting (store-bought or homemade)

Directions:

1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cocoa powder.
3. In a separate bowl, combine vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar. Mix well.
4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
5. Divide the batter evenly between the prepared cake pans.
6. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
7. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
8. Once the cakes are completely cooled, frost with cream cheese frosting between the layers and on top.
