1. Boil in well-salted water until al dente. Reserve ΒΌ cup pasta water, then drain.
2. Season shrimp with salt & pepper. Heat olive oil/butter in a skillet over medium-high. Cook shrimp 1–2 minutes per side until pink. Remove and set aside.
3. Lower heat to medium. Melt butter; add garlic and sautΓ© 30 seconds (don’t brown). Stir in cream and simmer 3–4 minutes until slightly thickened.
4. Reduce heat to low. Add Parmesan gradually, stirring until smooth. Loosen with pasta water as needed.

1 cup green olives, pitted and chopped

1 cup black olives, pitted and chopped

ΒΌ cup pickled vegetables (giardiniera), chopped

2 tbsp capers, rinsed

2 cloves garlic, minced

2 tbsp olive oil

1 tbsp red wine vinegar

Β½ tsp dried oregano

Sandwich

1 large round muffuletta bread, halved horizontally

4 oz thinly sliced salami

4 oz thinly sliced mortadella

4 oz thinly sliced ham

4 oz thinly sliced provolone cheese

4 oz thinly sliced mozzarella cheese

Directions

In a bowl, combine green and black olives, pickled vegetables, capers, garlic, olive oil, red wine vinegar, and oregano. Mix well and let sit for at least 15 minutes to allow flavors to meld.

Slice the muffuletta bread horizontally. Hollow out a little of the center if desired to make room for fillings.

Spread a generous layer of olive salad on the bottom half of the bread.

Layer Italian meats evenly over the olive salad.

Add provolone and mozzarella slices on top of the meats.

Spread a thin layer of olive salad on the top half of the bread.
