Tofu scramble & Facon
Sunday brekkie.
250g firm tofu
1/2 onion
1 small capsicum
1small tomato
Handful of green beans
1 zucchini
1/4 cauliflower
Crumble the tofu.
Chop all the veg
Fry off onion, cauliflower, beans
Add tofu and heat through
Add tomato, capsicum
Season - we used turmeric, paprika and cumin, teaspoon of veggie stock, sprinkle of nutritional yeast, 250ml water
Cook down for a few minutes and served on sour dough toast with a rasher of vegan bacon. Serves 2 with some left over. Yum!

Rare….
On the rare occasion when our urban life is silent, it reminds me what a simpler life could look like. The Gold Coast T100 Triathlon has Marine Parade closed this weekend & it takes me back to the COVID era when the roads were silent, dolphins schooled in the Broadwater and the birds sung in the breeze…
