As the Autumn nights draw in and that first real chill fills the air, there’s nothing quite like the smell of roasted vegetables drifting from the oven. This is my take on the classic French tian – a stunning, fuss-free bake where thinly sliced seasonal vegetables are layered together and slow-roasted until tender, golden, and full of deep, caramelised flavour. Simple to make, beautiful to serve.
