If your garden looks anything like mine - it’s a bit overgrown, perhaps straggly. This is when I feel like ripping it all out and getting some fall crops in. But I’m trying to be patient because the crop was late this year due some weird spring weather, the smoke from the fires and from July being so dry. However, my herbs are wild! I mean like small creatures erupting from their flower boxes.

Yesterday I just started grabbing the oregano,, rosemary, parsley, thyme and basil by the handfuls. I brought them inside and made herb cubes for the winter months. I do this every year and every year when making soups and sauces and stews I’m so thankful for the burst of “freshness” that these little gems offer to my recipes.

So simple- take whatever herbs you prefer. Place in a blender with a little lemon juice, salt and pepper, a drizzle of olive oil and a splash of water. It should be thick but pourable. These little silicone molds have changed the game for me. So easy to pop right out. Freeze overnight. Then pop out into a zip lock.

I’m telling you- this will be your new favorite flavor hack for your winter dishes!
