When creating alfresco wonderlands, landscape designers utilize every option in their toolbox: trees to supply rigid structure and flamboyant and showy annual flowers as eye candy (much like adding jewelry to an outfit). But their ultimate secret weapon might just be ornamental grasses. Dotting your garden with these plants is akin to giving your landscape a good hair day: they provide romantic texture and practically dance, catching the wind in a poetic way that can calm the senses.

“My esteem for ornamental grasses has increased in the years as I have gotten to know them better and use them in all different ways,” says Janice Parker, principal of Greenwich, Connecticut-based Janice Parker Landscape Architects. She recently employed salt-tolerant grasses in a waterfront estate and layers of native grasses edging a woodland, both in Fairfield County, Connecticut. “And of course, they are deer resistant, which makes them all the more valuable,” she says.

It’s no wonder you will spot ornamental grasses on the grounds at some of the world’s most famous gardens, including painter Claude Monet’s home in Giverny, France, where he lived from 1883 to 1926—and reportedly planted Reed Canary Grass for texture. Longtime Vogue magazine editor Anna Wintour has famously let the ornamental grasses at her forty-acre home near the Hamptons on New York’s Long Island run wild, with uncut meadows that juxtapose against manicured boxwoods.

“Ornamental grasses are one of the bigger players in environmental gardens,” says Parker. Her expert advice on how to use them? Plant them with different perennials in groupings with other plants that share their cultural requirements (i.e. water and sun needs). As with interior design, variety is key for a layered look that holds your interest. “Be careful to mix ornamental grasses with other shapes and forms of plants to complement their linear foliage and create a visual balance,” says Parker.

Some of our favorite easy-to-grow, low-water ornamental grass options? The artfully tufted, sculptural blue oat grass (Helictotrichon sempervirens), which can grow up to four feet tall and is hardy to minus 20 degrees Fahrenheit, and pampas grass (Cortaderia selloana) up to a towering eight feet tall and as eye-catching as they come, with feathery seed heads that are often cut and dried to add visual interest indoors, too. (You can see the latter flourishing if you tour the grounds at The Biltmore Estate in Asheville, North Carolina; the outsized stature of pampas grass jives perfectly with the circa-1889 chateau, said to be the largest private home in the nation with 178,926 square feet of floor space.) Parker recommends grasses in the Pennisetums, or fountain grass, family; native to Asia and Africa, they often feature bottlebrush plumes that add a lacey flourish in any landscape. “They are absolutely the most valuable ornamental grass that I use,” she says. “It’s well behaved—it doesn’t grow too tall or too short. It will attain the perfect height around eighteen inches to three feet. The blooming in the fall can be a dusty purple or silvery white plume ‘feather’ and it is utterly gorgeous. Mass these grasses [by planting many of them together], and plant liberally. You will not be disappointed.”

Happy Friday! Check out this recipe for these delicious peanut satay burgers! Yum! 🍔

3 brioche buns
1 pound 80% lean ground beef
Salt and pepper to taste
9 slices pickled jalapeño
4 slices cheddar cheese
9 fried onion strings
6 strips cooked bacon
⅓ cup peanut satay sauce (recipe to follow)
⅓ cup mayonnaise

🥜 Peanut Satay Sauce
½ cup coconut milk
2 tablespoons brown sugar
2 teaspoons lime juice
½ teaspoon coriander
½ teaspoon soy sauce
½ teaspoon fish sauce
½ cup peanut butter
Water to adjust consistency

🧅 Onion Strings
1 cup buttermilk
1 teaspoon salt
1 cup flour
½ teaspoon ground pepper
1 onion, crosscut into rings
Vegetable oil for frying

To make the peanut satay sauce in a saucepan, combine all the ingredients minus the peanut butter, stirring to combine. Bring to a simmer, then remove from heat. Let cool, then mix in the peanut butter. Adjust consistency with water.

To make the onion strings in a saucepan, heat 1 inch of oil to 350 degrees F.

In a bowl, combine the buttermilk, salt, and 2 tablespoons flour. Pour the remaining flour into a separate shallow bowl and season with pepper.

Burger and Fries #1
Dip the sliced onions in the buttermilk mixture and dredge in seasoned flour to coat. Dust off excess flour.

Slowly lower the coated onions into the oil. Fry in batches, fully submerged in the oil until golden brown. Remove from the oil and drain well.

Preheat a grill or grill pan over medium-high heat.

Divide meat 3 ways and roll into balls, pressing to form disks 4½ inches in width. Season with salt and pepper.

Grill on both sides, remove from heat, and top with cheese.

Spread mayonnaise on the bottom half of the bun, spread satay sauce on the top half, then place the cooked patty on top of the bottom half of the bun.

Layer with 2 strips bacon, 3 fried onion strings, and 3 pickled jalapeños on top of the patty, finishing with the top half of the bun.

*MAKE IT VEGETARIAN. Opt for plant-based burgers and bacon strips. Skip excessive smoky flavors or additives.

Mango Margarita Sorbet! YUM! 🍹🥭
Just in time to prepare for the long weekend!

24 ounces (approximately 2 large) ripe mango, sliced
3 tablespoons lime juice
⅛ teaspoon salt
1 tablespoon triple sec
3 tablespoons tequila
¾ cup sugar
Pinch Tajin seasoning

1. Place ice cream maker bowl in freezer in advance to chill.

2. Clean, peel, then slice the mango flesh off the pit.

3. In a blender, combine the mango, lime juice, salt, triple sec, tequila, and sugar, blending until smooth. Refrigerate for at least 2 hours.

4. Pour the pureed and chilled mango mixture into the pre-frozen bowl of the ice cream maker, churning until thick, but spoonable. Serve right away or scoop the sorbet out of the bowl and into a freezer-safe container. Place it in the freezer to hold for later service or to firm. When serving, individually season with Tajin to your tastes.
