Great Family Day long weekend at the cabin!

By Sunday afternoon we couldn’t keep up with clearing the snow off the ice rink.

Good things happening in Haiti even with so much instability in the country.

Proud to be partnered with Alongside Families in Haiti.

Earlier this year we reached out to the local farmers, many in the mountain community of Tetebef, to see how we could support their small farms and help them grow their capacity. We provided some necessary tools and began conversations about how an interest free loan could jumpstart their progress.

This week we visited one of the farms to see how their harvest was and the farmer proudly showed us this tree.

He was able to reserve a portion of his crop and it is drying on the tree. Some of this dried corn will be ground into corn meal and some will be used to plant the next crop.

This is what empowerment looks like.

In honour of National Margarita Day, here is a couple of beauties we made up for tonight’s dinner!

Spicy Mango Margarita
Serving: 2
1.5 oz Cointreau
4 oz Teremana Small Batch Tequila
2 oz Lime Juice
2 cups Chopped Frozen Mango
2 oz Jalapeño Simple Syrup*

Combine all ingredients in a blender. Blend until smooth.

Run a lime around the rim of two short glasses and then rim with Tajin. Fill right to the brim, so the margarita grabs a bit of the Tajin flavour.
Garnish with lime and mango slice.

*Jalapeño Simple Syrup
1 Cup Water
1 Cup Sugar
3-4 pieces of freshly sliced jalapeño
Add into a small saucepan and bring to a boil on medium heat. Let simmer for 5 or so minutes and then cool in fridge.
It’s that simple. 😉

Pairs well with freshly made chicken fajitas.
