The Bank of Canada maintained its overnight rate at 5 per cent, continuing its quantitative tightening policy. Expressing concern about risks to the inflation outlook, particularly persistent underlying inflation, the Bank remained committed to allowing the current restrictive policy to continue to ease underlying inflationary pressures.

The Bank of Canada’s decision reflects a cautious approach. Looking ahead, most analysts anticipate cuts to the policy interest rate starting in June as a precautionary measure to prevent a further slowdown in the economy.

Get ready for a spooky treat this Halloween with my homemade Spiderweb Chocolate Cheesecake! Here's how to make it:

Ingredients:

1 1/2 cups chocolate graham cracker crumbs
1/4 cup granulated sugar
1/2 cup melted unsalted butter
For the Cheesecake Filling:

3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1/2 cup sour cream
1/2 cup heavy cream
4 oz semi-sweet chocolate chips, melted and cooled slightly
For the Spiderweb Decoration:

1/4 cup melted white chocolate chips
Black gel food coloring
Instructions:

Preheat your oven to 325°F (160°C). Place a water-filled baking dish on the bottom rack to prevent cracking.

Prepare the Crust: Mix chocolate graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan.

Bake the crust for 10 minutes, then set aside to cool.

In a large bowl, beat softened cream cheese until creamy. Add 1 cup sugar and vanilla extract, mixing well.

Add eggs one at a time, beating after each. Stir in sour cream, heavy cream, and melted chocolate.

Pour the cheesecake filling over the crust, tapping to remove air bubbles.

Place the pan on a baking sheet and bake for 45-50 minutes, until edges set but center is slightly jiggly.

Turn off the oven, crack the door, and let the cheesecake cool inside for an hour.

Remove, let it cool to room temperature, then refrigerate for at least 4 hours or overnight.

For the spiderweb decoration, melt white chocolate chips and add black food colouring for a black hue.

Use a piping bag or plastic bag with a corner cut off to pipe concentric circles of black chocolate on the cheesecake.

With a toothpick or skewer, draw lines from the center of the circles outward to create a spiderweb pattern.
