This is 𝐏𝐄𝐉𝐈𝐁𝐀𝐘𝐄 — a traditional Costa Rican peach palm fruit that locals absolutely love. 🇨🇷🌴
And if you've never heard of it, you're definitely not alone.
You may have already seen these unusual orange fruits at a Costa Rican feria or roadside stand and wondered:

Here's the wild part…
👉 𝐘𝐎𝐔 𝐂𝐀𝐍'𝐓 𝐄𝐀𝐓 𝐏𝐄𝐉𝐈𝐁𝐀𝐘𝐄 𝐑𝐀𝐖.
The fruit grows in enormous, heavy clusters underneath the fronds of the peach palm tree. When ripe, the colors can range from green to orange and even reddish tones. 🌴
Once harvested, pejibaye is traditionally boiled in salted water until tender, then peeled and the seed removed.
And how do Costa Ricans traditionally enjoy it?
😋 𝐖𝐈𝐓𝐇 𝐌𝐀𝐘𝐎𝐍𝐍𝐀𝐈𝐒𝐄.
Yes… mayonnaise! 😂
Usually sliced and served warm, often alongside a fresh cup of Costa Rican coffee. ☕🇨🇷
The texture?
Think sweet potato meets chestnut — dense, starchy, slightly nutty and savory rather than juicy and sweet.
And it's not just a snack.
Pejibaye can also be used in creamy soups, baked dishes and other traditional recipes.

It's not nutritionally like most tropical fruits.
Pejibaye is a starchy, energy-dense fruit that provides carbohydrates, fiber, plant protein, healthy fats, potassium and carotenoids.
It's almost like nature created something halfway between a fruit and a starchy vegetable.
And when cooked starchy foods are cooled, some of their starch can become resistant starch, which is digested more slowly and can be used by beneficial gut bacteria.
So that funny-looking fruit you've been walking past in Costa Rica?
