Here’s how it’s all done:
1. Harvest
Ugni Blanc grapes picked in here in the Charente region of France
2. Fermentation.
The juice becomes a low-alcohol base wine (no sugar added)
3. Double distilled
In copper pot stills (alambic charentais), creating "eau-de-vie" and no you can’t drink that!
4. Aged in French oak barrels which is where the magic happens (Limousin or Tronçais) for at least 2 years, often much much longer
5. Blended
By master blenders they combine eau-de-vie from different years/barrels for consistency
6. Bottled
And labeled VS, VSOP, or XO depending on age
Only brandy from this specific region, made this exact way, can legally be called Cognac everything else is just brandy.
