🍛 MEAL MONDAY
Chickpea Curry (under £2)
HOW TO:
Ingredients:
- 1 tin chickpeas (drained)
- 1/2 onion (or 1 tsp garlic paste)
- 1 tin chopped tomatoes
- 1 to 2 tsp curry powder
- Salt + pepper
- Rice (or naan)
- Optional: spinach / yoghurt / chilli flakes
Steps:
1) Fry onion with a little oil for 3 to 4 mins.
2) Add curry powder, stir for 30 seconds.
3) Add tomatoes + chickpeas. Simmer 10 mins.
4) Season, then serve with rice.
Cheap, warming, and makes leftovers for tomorrow too.
