See one? Keep your distance. Don't feed them. Let them pass. They're used to people but they're not pets.

Early morning walks (dawn to 8am) give you the best chance of spotting them. They graze on heather and grass before the day warms up. Bring a camera. They're worth the effort.

Walk the city walls. They're 1.7 miles long and give you the whole story. Go early, around 9am, when tour groups haven't arrived.

Thatch was chosen because it keeps homes warm in winter and cool in summer. The thick straw acts as natural insulation, something our ancestors understood perfectly well.

When you walk past a thatched cottage, look at the ridge. A decorative pattern there often shows the thatcher's signature. It's like finding their name carved into history.
