Healthy Spicy Mango Thai Salad Bowl

πŸ₯­πŸ”₯ Fresh, vibrant, and bursting with Thai-inspired flavors! This Healthy Spicy Mango Salad Bowl is the perfect mix of sweet mango, crunchy veggies, and a zesty chili-lime kick 🌿✨

Ingredients:

1 ripe mango, sliced πŸ₯­
1 cup shredded red cabbage
1 cup mixed greens πŸ₯¬
1/2 cucumber, julienned πŸ₯’
1/2 red bell pepper, thinly sliced 🌢️
1/4 cup carrots, shredded πŸ₯•
2 tbsp fresh cilantro, chopped 🌿
2 tbsp roasted peanuts, crushed πŸ₯œ
200g cooked shrimp or grilled chicken (optional) πŸ€πŸ—

Dressing:

2 tbsp lime juice πŸ‹
1 tbsp soy sauce
1 tbsp honey 🍯
1 tsp chili flakes 🌢️
1 tsp sesame oil
1 tsp grated ginger 🫚

Instructions:

Prepare and slice all vegetables and mango, placing them in a large bowl (6 min). πŸ₯­πŸ₯¬
If using shrimp or chicken, cook or warm it in a pan until ready (5–6 min). 🍳
In a small bowl, whisk together lime juice, soy sauce, honey, chili flakes, sesame oil, and ginger (2 min). πŸ₯£
Pour dressing over the salad ingredients and toss gently to combine (2 min). πŸ₯—
Top with cooked protein if using, then sprinkle with cilantro and crushed peanuts (2 min). 🌿πŸ₯œ

500 g chicken thighs or drumsticks πŸ—
1 tbsp oil
1 onion, chopped πŸ§…
3 garlic cloves, minced πŸ§„

1–2 tsp curry powder or Sri Lankan curry blend 🌢️
