Melon and a slice of jalapeño in the same glass. 🌶️

It read wrong on paper and worked on the first try. Sweet, cold, then a small bite of heat at the end.

One of the best things we made this year, and we'll defend that.

Charcoal, skewers, and corn turning at the edge. 🔥

The grill ran from early evening until the last table was done. Everything that came off went straight out, no waiting, nothing resting under a lamp.

You could smell it from the sunbeds.

Yoghurt, granola, and whatever fruit came in that morning. 🍯

Pear, nectarine, grapes, blueberries, it changed with the week, which was always the point.

The lightest thing on the menu and one of the most ordered.

Four seconds between the plate landing and the knife going in. Our kitchen rebuilt this one more times than anybody bothered counting.

Every cocktail we poured this summer had something behind it. 🍸

Fruit cut that morning. Recipes tested more times than we'll admit. A garnish there for a reason, and the sea in front of every glass.

Thank you for raising them with us, from the first sunset to the last.

That was the whole distance this summer, between lying down and diving in.

Clear water, long afternoons, and no reason to be anywhere else.

Those days are packed away for now. The sea stays exactly where we left it.
