【文化小教室｜Masala 等於咖喱(Curry)嗎？解碼兩者分別與家常咖喱雞香料食譜 🍛✨】
每次提及南亞美食，大家一定會想起香氣濃郁的咖喱(Curry) 🍛，但您知道它與「Masala」究竟有什麼分別嗎？🤔
其實在印地語中，「Masala」指的是「混合香料」💡，是將多種乾香料混合研磨而成的調味精華；而「Curry」則泛指以香料、醬汁與食材一同燉煮的濃郁菜式 🍲。簡單來說，Masala 就是烹調 Curry 時不可或缺的靈魂調味料！✨今日就同大家分享一道南亞家常菜式 -咖喱雞的食譜啦!

🍗 家常咖喱雞香料食譜（4人份 ）：
醃製雞肉 🍗：將 600 克雞腿肉切塊，加入原味優格 3 大匙、薑蓉與蒜蓉各 1 大匙、薑黃粉 1/2 茶匙及鹽 1 茶匙拌勻醃 30 分鐘。
爆香底料 🧅：熱鍋下油，放入丁香 3 粒與壓破的綠豆蔻 3 粒爆香，再加入 1 顆切碎的洋蔥炒至金黃色。
調製醬汁 🍅：加入 2 顆切碎的番茄煮軟，隨後放入芫荽粉 1 大匙、孜然粉與辣椒粉各 1 茶匙、薑黃粉 1/2 茶匙炒出香氣。
燉煮雞肉 🍲：放入醃好的雞肉翻炒，加入適量水份以小火燉煮至雞肉軟嫩。

When we think of South Asian cuisine, curry always comes to mind 🍛, but do you know the real difference between "Masala" and "Curry"? 🤔
In Hindi, "Masala" means "mixed spices" 💡, referring to the blend of dry spices used for seasoning; while "Curry" refers to the cooked dish featuring rich sauce, spices, and ingredients simmered together 🍲. Simply put, Masala is the foundational spice blend that creates a great Curry! ✨ Today, we are excited to share a South Asian home style dish with you, the Chicken Curry recipe!

🍗 Home style Chicken Curry Recipe (Serves 4 ):
Marinate Chicken 🍗: Cut 600g chicken thigh into pieces, mix with 3 tbsp plain yogurt, 1 tbsp minced ginger, 1 tbsp minced garlic, 1/2 tsp turmeric powder, and 1 tsp salt, then marinate for 30 minutes.
Sauté Base 🧅: Heat oil in a pan, add 3 cloves and 3 crushed green cardamoms, then sauté 1 chopped onion until golden brown.
Build Sauce 🍅: Add 2 chopped tomatoes until soft, then stir in 1 tbsp coriander powder, 1 tsp cumin powder, 1 tsp chili powder, and 1/2 tsp turmeric powder until fragrant.
Simmer Chicken 🍲: Add marinated chicken, stir well, add water, and simmer on low heat until tender.
