What are these grapes doing under the sea?🍇🌊
It may look unusual, but this experimental w**emaking technique has very ancient roots.
Inspired by a practice documented on the Greek island of Chios, selected bunches of grapes are submerged in seawater before being dried and vinified. The immersion helps reduce the natural waxy coating on the grape skin, known as pruina, encouraging the subsequent drying process.
Today, some Cinque Terre w**emakers are bringing this ancient idea back to life, experimenting with local grapes and creating a fascinating connection between w**e, sea and history.
And the connection with Chios goes even deeper: for centuries, the Greek island had strong ties with Genoa, leaving traces of this shared Mediterranean history that can still be found in our territory.
