Here's a simple and delicious recipe for Garlic Mushroom Pasta [Serves 4]
Ingredients:
225g of your favorite pasta (linguine, spaghetti, fettuccine, etc.)
2 tablespoons olive oil
4 cloves garlic, minced
225g mushrooms, sliced
Salt and black pepper to taste
1/2 teaspoon red pepper flakes (optional, for a bit of heat)
1/2 cup (120ml) chicken or vegetable broth
1/2 cup (120ml) heavy cream
1/2 cup (50g) grated Parmesan cheese
2 tablespoons chopped fresh parsley, for garnish
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil.
Cook the pasta according to the package instructions until al dente.
Drain the pasta and set aside.
Saute the Garlic and Mushrooms:
In a large skillet, heat olive oil over medium heat.
Add minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.
Add the sliced mushrooms, season with salt, black pepper, and red pepper flakes (if using).
Cook the mushrooms until they release their moisture and become golden brown, about 5-7 minutes.
Prepare the Sauce:
Pour in the chicken or vegetable broth, scraping the bottom of the pan to deglaze and incorporate any flavorful bits.
Allow the broth to simmer for 2-3 minutes.
Stir in the heavy cream and grated Parmesan cheese.
Cook for an additional 2-3 minutes until the sauce thickens.
Combine Pasta and Sauce:
Add the cooked pasta to the skillet with the mushroom and garlic sauce.
Toss everything together until the pasta is well-coated with the sauce.
Serve:
Garnish with chopped fresh parsley and additional Parmesan cheese if desired.
