One of my favorite Puerto Vallarta evenings starts with no reservation at all: it starts by following the lights and the smell of something sizzling.

After years of spending time around this city, I still love wandering into an evening food-truck gathering with the palms swaying overhead, music in the background, and locals deciding what to try next. Instead of sitting through a formal dinner, we can share a few grilled bites, find a cold drink, and keep moving from one delicious stop to the next.

My insider tip? Go hungry and order something different from each truck. The casual atmosphere, warm evening air, and friendly conversations are a big part of the experience. These are the nights that make Puerto Vallarta feel less like a resort destination and more like a place you’re lucky to know.
