Goat Meat Lovers Merry Saturday 🥰

Mutton Curry😋😍
Ingredients
For the Mutton:
500g mutton (goat or lamb, bone-in or boneless, cleaned and cut into pieces)
2 tablespoons plain yogurt
1 tablespoon ginger-garlic paste
1 teaspoon turmeric powder
Salt to taste
For the Curry:
3 tablespoons oil or ghee
2 medium onions (finely chopped)
2 medium tomatoes (pureed or finely chopped)
3-4 green chilies (slit lengthwise)
1 teaspoon cumin seeds
2-3 green cardamom pods
1 bay leaf
1 cinnamon stick
4-5 cloves
1 teaspoon turmeric powder
1 teaspoon red chili powder
2 teaspoons coriander powder
1 teaspoon garam masala powder
1/2 teaspoon cumin powder
2 cups water (adjust based on desired consistency)
Fresh cilantro (chopped, for garnish)

Instructions
Marinate the Mutton
In a bowl, mix the mutton with yogurt, ginger-garlic paste, turmeric powder, and salt.
Cover and let it marinate for at least 30 minutes to 1 hour (overnight for better results).
Cook the Mutton
Heat 1 tablespoon of oil or ghee in a pressure cooker or a heavy-bottomed pot.
Add the marinated mutton and sauté for 5-7 minutes on medium heat.
Remove the mutton and set it aside.
Prepare the Base
Heat the remaining oil or ghee in the same pot.
Add cumin seeds, cardamom pods, bay leaf, cinnamon, and cloves. Sauté until aromatic.
Add the chopped onions and cook until golden brown.
Stir in the ginger-garlic paste and sauté until the raw aroma disappears.
Add Tomatoes and Spices
Add the tomato puree and cook until the oil starts to separate.
Mix in turmeric powder, red chili powder, coriander powder, and cumin powder. Stir well.
Cook the Mutton in the Curry
Add the mutton back into the pot along with the juices.
Mix well to coat the mutton with the masala.
Add water, cover, and cook:
In a pressure cooker: Cook for 4-5 whistles, then let the pressure release naturally.
In a pot: Cover and simmer for 40-50 minutes, stirring occasionally, until the mutton is tender.
Finish the Curry
Once the mutton is tender, stir in garam masala powder.
Adjust salt and water for consistency if needed.
Garnish with fresh cilantro.

Serve
Serve the mutton curry hot with steamed rice, naan, roti, or parathas, along with a side of raita or salad.

HOW TO MAKE PLANTAIN MOI MOI

RECIPES

6 fingers of overripe plantain (Even if the skin is now black, as long as the inside is not decomposed)

1-2 fingers unripe plantain ( can use plantain flour if you so please. Just devolved with water and add to your blended plantain)

1-2 cooking spoons red palm oil

3 tbsp ground crayfish

2 large onion

5 scotch bonnet Pepper

2 large tatashe
Salt to taste

1 Knorr cube, 2 tsp curry,
1tsp dry ginger and garlic
( optional)
Cool water not chilled

TOOL
Plantain leave or
Any foil plate
Feel free to use any of the moi moi plate
Or tomato cup.

METHOD OF PREPARATION
Wash and peel your plantain (separate overripe from unripe) cut into small sizes,put in blender,add some quality of water to enable the blade blaze the overripe( grind)then pour in a large bowl, do same to unripe,( like aslo blend the unripe)then add to the overripe in the large bowl, add red palm oil, crayfish,onion Pepper mix,cube,curry, ginger and garlic. Stir everything to incorporate, then gently fold your plantain leaves in party cap shape, scoop your batter in it, repeat the process until you exhaust your batter,can use any other plate if you don't want to go through the stress of Plantain leave. Get a big pot, pour water into the pot, then Place a stand in the pot or kindly arrange sack bag into the pot to avoid water penetrating into your moimoi , then put your moimoi, cook or steam for 25-30 minutes bring down allow to cool down then serve with pap or custard.
