If your lemon tree is producing fruit faster than you can give it away to the neighbours, here's a delicious way to put a few to good use! This classic self-saucing lemon pudding is warm, comforting, incredibly easy to make, and the perfect excuse to enjoy dessert on a chilly winter's night.
EASY LEMON-SELF SAUCING PUDDING
Pudding
1 cup self-raising flour
½ cup sugar
50g butter, melted
1 egg
½ cup milk
Zest of 1 lemon
Sauce
Juice of 1 lemon
½ cup sugar
1½ cups boiling water
Preheat your oven to 180°C.
Mix together the flour and sugar. Stir in the melted butter, egg, milk and lemon zest until smooth.
Pour into a greased baking dish.
Sprinkle the extra ½ cup of sugar evenly over the top.
Mix the lemon juice with the boiling water and gently pour over the back of a spoon onto the pudding mixture (don't stir!).
Bake for 35–40 minutes, until golden on top.
Serve warm with vanilla ice cream, whipped cream or custard. Enjoy!
