👩🍳Here's a delicious soup recipe for you to try - perfect for a wintery weekend lunch or easy evening meal.
NZ Orange Kumara, Leek & Bacon Soup
Ingredients:
1kg orange kumara
1 large leek
1 grated carrot
1 litre chicken stock (or 2 stock cubes & water
1 teaspoon mild Indian curry powder
25g butter
Salt
300g bacon bits
Parsley or chives
Method:
Peel kumara and cut in chunks, boil in stock liquid along with grated carrot, curry powder and salt for about 15-20 minutes.
Gently cook leek in the butter. Do not brown or it will lose its sweetness, Add the leek to kumara and stock, continue cooking until all is soft.
Use a stick blender or food processor to puree. If too thick for your liking add coconut milk.
Brown off the bacon to your desired crispiness.
Top with the bacon bits along with parsley or chives.
Enjoy with your favourite crusty bread.
