Nice find in Remuera…

Spiga has amazing cocktails, authentic Italian food and great staff, in a smart casual atmosphere.

The recommended Barbaro cocktail did not disappoint, in fact it was one of the best I’ve had.

Paul’s Tiramisu was exceptional, light and balanced and my saffron cream profiteroles (which I did not have room for and Paul finished) with a warm bitter chocolate sauce on the side, was a clever mix.

The complimentary Limoncello was a perfect palate cleanser after the rich dessert!

Another rainy day!

Using up our pumpkins, with parsnip and kumara for added flavour, the chicken stock I make and freeze whenever I roast or slow cook chicken, toasted cumin seeds and ginger for warmth, herbs for flavour layers, coconut cream for that smooth feel and a splash of lemon juice once blended to add brightness.

Toss some shredded chicken and spinach leaves in for variety or freeze as is. There’s always a batch in our freezer. 😋

Tip: Roast the veggies until they start to brown (with onion & garlic if you’re not low FODMAP like me) the caramel flavour intensifies the end result.

Rainy days, kitchen calls…

Threw together some healthy (truly) keto “fudge”.

1 cup smooth peanut butter
1/3 cup butter
1/3 cup coconut oil
1/2 cup golden monkfruit sweetener
1 Tbsp collagen powder
1/4 cup chocolate protein powder
Pinch of sea salt (of using unsalted peanut butter)

1 tsp vanilla essence

Stir in a saucepan over medium heat until melted and creamy then add vanilla essence. Set in a paper lined small tray or loaf tin in the fridge (or freezer if you can’t wait) and cut into small pieces once firm.

This is rich enough you can satisfy a craving in one piece without the sugar hit and consequences. 😋
