PORTUGUESE FOOD & WINE ⢠Portuguese fishermen were fishing for cod (bacalhau) as early as the 15th century, during the Age of Discoveries. Portuguese ships travelled to the rich cod grounds around Newfoundland. Salting and drying made cod exceptionally useful for long sea voyages: it could be preserved for months without refrigeration and provided a protein-rich food.
Over time, dry salted cod became deeply embedded in Portuguese cuisine and culture, despite Portugal having a long coastline full of fresh fish.
