From here, young passengers eagerly hung from the door to see the gushing cascades of the spectacular St Clair's Falls through tea bushes. Cold air drifted in from the open windows and rising mist cloaked the towering Great Western mountain range. Many passengers got off the train at Nanu Oya, a tea-country town where visitors can tour the plantations and learn about the history of tea on the island; but I stayed on board, climbing up to Pattipola, the highest broad gauge railway station in the world. From here, we finally left the cold central hills, travelling past dairy farms towards the sun-drenched south-eastern mountains.

This influence has spread far and wide to countries like Brazil, which imported 8.6 tonnes of salt cod during the Easter period alone in 2019, or Angola, which imported 308 tonnes of salt cod from Norway in 2012, according to the Interpretative Center of the History of Cod, Lisbon's museum dedicated to the fish. In Italy, they even hold a salt cod festival, Festa del Bacala, every year near Venice, and in the Tuscan region they favour classics such as baccalà alla livornese, which marries salt cod with a rich, garlicky tomato sauce.

According to a conservation plan compiled by Ireland's Heritage Council, the town flourished into the 15th Century, with archaeological evidence revealing homes, a marketplace, a tower, a bridge, streets, a mill, a water management system and nearby Jerpoint Abbey, which still stands today. But by the 17th Century, the town's occupants were gone, likely from a combination of violent attacks and a plague.
