Colter's interest in Native American culture began when an uncle gave the family a series of sketches by Sioux prisoners who'd been interned in Montana in the 1870s. Colter kept the drawings and nurtured a lifelong interest in Native American culture, collecting art, attending dances and travelling throughout the Southwest and Mexico to study Native and Hispanic art and architecture.

Colter's first assignment for Fred Harvey was to design the interior of the Indian Building at the Alvarado Hotel in Albuquerque. The floorplan led visitors past Native American artefacts to shops where travellers could buy their own Indigenous crafts. Harvey wanted to showcase high-quality crafts linked to Indigenous cultures, so his company hired Native American artists to demonstrate their techniques, including Navajo weaver Elle of Ganado, who wove blankets in the building. She eventually became one of the most famous Native American artists of the era.

Traditionally, the sausages should be consumed before the church bells ring at midday, reflecting a time before refrigeration and different preparation techniques. While this is no longer necessary, many places and locals still abide by it. Others, including Wallner and Portenlänger, now serve them past this cut-off, but it does feel odd ordering them late in the afternoon.

Yet, the area isn't just a microcosm of New York City because of its culinary and cultural diversity, it also reflects the ways New York is rapidly changing. In a city that has historically served as something of a global neighbourhood for people from around the world, the pressures of rising rents are threatening New York's character. In December 2022, the city was named the world's most expensive city for the first time by the Economist Intelligence Unit, and as rampant gentrification and shifting demographics have led some to fear it's becoming "the world's largest gated community", neighbourhoods like Jackson Heights that are home to recent arrivals are especially vulnerable to losing their unique character.

As Sebulan worked, a teenage girl combed through the tangled bundles of abacá fibre to enhance their softness and durability and prepare them for weaving. Next to her, another lady was inserting weft threads into dyed warp threads on a loom that revealed the textile's intricate pattern.
