"Everybody just wants to be a part of Wrexham now. Named after Cecil Sharp, a folk music enthusiast who roamed the countryside of England and the US South collecting folk music and dances in the early 20th Century, this temple to vernacular culture threw open its Arts and Crafts-style doors in 1930. Nowadays, it competes with the colourful street theatre of neighbouring Camden Market, making it easy to pass this non-descript building without realising the hotbed of cultural boundary-pushing that lurks behind its terracotta brick facade.

His carbonara is very yellow in colour since he only uses egg yolks – one per 60g of pasta. He whips it together with pecorino cheese, pepper and some of the rendered fat from the guanciale, creating a savoury zabaione (an Italian custard). The final touch: he doesn't put the pasta with the egg mix back on the stove, but instead warms it up using the bain-marie technique (placing it over a heated water bath instead of direct heat), so that it doesn't "cook" but instead becomes creamy. He slowly adds some more liquid fat, adding the crispy guanciale at the very end. "That's important," he said. "If you add it before, it becomes soft." He serves it with pecorino and pepper.

Governors Island also bore witness to many historic moments. In 1919, Wilbur Wright took off from a landing strip on the southern part of the island on the first American flight over water. Composer Burt Bacharach regularly performed at The Officer's Club on the island in the early 1950s. President Ronald Regan hosted Mikhail Gorbachev in the 19th-Century Admiral's House mansion in 1988. In 2001, the island was designated a National Monument and two years later, it was sold to the city and state of New York for $1. Finally, in 2005, it opened to the public.
