Behind the glass at Fischer's Meat Market in Muenster, the meat is still trimmed by hand.
The sausage is still made the way it was made at the start, from spice blends the founding family has handed down since 1927. That is the year four men opened the doors, and they picked St. Patrick's Day to do it.
Muenster was a small farm town in Cooke County then, and Sunday was the big day of the week for a meat market. Families came into town for church, and before they headed back out to the country they stopped and bought what they needed for the week.
Two years after those doors opened, the Depression arrived. It closed a great many small-town businesses in Texas. It did not close this one.
One of the four founders stayed with the market until he died in 1976. His nephew was still involved when he died in 1988. Ownership passed along inside the family again in 2005, three generations in, and the cases are still full.
It turned ninety-nine this past St. Patrick's Day, which puts the hundredth just over the horizon.
