From the Garden to the Dinner Table!

Thank you for joining us at the Emerald Heights Harvest Fiesta! We loved celebrating the season with our community and sharing some of the wonderful fresh produce grown right here in our garden. ❤️

Now comes the fun part—what can you make with it?

You don’t need a complicated recipe or expensive ingredients to turn fresh garden produce into something delicious. Sometimes you can start with an everyday pantry staple and simply color outside the recipe lines!

🥦 Garden-Packed Mac & Cheese

Start with your favorite boxed mac & cheese, prepared according to the package directions, then give it a fresh garden upgrade:

🥦 Fresh broccoli, finely chopped
🥒 Fresh zucchini, diced or shredded
🧄 Fresh garlic, minced
🌿 Fresh basil or chives
🥄 A spoonful of plain Greek yogurt for extra creaminess and a little added protein

Sauté the broccoli and zucchini in a little olive oil until just tender and beginning to brown. Add the fresh garlic toward the end, giving it a few minutes to mellow and flavor the vegetables.

Prepare your mac & cheese, stir in a spoonful of Greek yogurt, then fold in your garden vegetables. Finish with fresh basil or chives.

And that’s it!

We’re not pretending mac & cheese suddenly became health food. 😂 It’s still mac & cheese. We’ve simply taken an inexpensive, familiar staple and added fresh vegetables, more nutrients, a little extra protein, and a whole lot more flavor.

Over the next few days, we’ll be sharing more simple ideas for pairing everyday pantry staples with fresh garden produce—because eating well doesn’t always mean starting from scratch.

Emerald Heights Apartments invites residents to celebrate the season at the Emerald Heights Harvest Fiesta on Saturday, September 12, beginning at 2:00 PM at the Emerald Heights Community Garden.

The Harvest Fiesta will feature delicious fresh food, live music, games, prizes, garden activities, and plenty of fall fun for all ages. Residents may also share fresh produce from their personal garden plots, alongside fruits and vegetables harvested from the Emerald Heights Community Garden.

Shelf-stable foods and canned goods will also be available for residents to take home, making the event not only a celebration of the season, but also an opportunity to share the abundance of our community.

The festivities will begin at 2:00 PM, with family-friendly activities throughout the afternoon and the celebration continuing later into the evening for adults.

And a little Northwest rain won’t stop the fun. Emerald Heights will have tents, awnings, and restaurant-style outdoor heaters available to help keep guests comfortable throughout the event.

The Emerald Heights Harvest Fiesta is designed to celebrate the end of the growing season, bring neighbors together and highlight the community garden and the residents who have helped make it flourish.

We remember those who never made it home, the first responders who ran toward danger, and the countless families and communities forever changed.

At Emerald Heights, we reflect on the strength that comes from unity, compassion, and standing together. May we continue to carry forward the spirit of kindness, service, and remembrance.
