Combine 1⁄2 cup chilled apple cider with a small
pinch of cinnamon and the juice of half a lemon.
Stir, pour over ice, and top with sparkling water;
garnish with a cinnamon stick and apple slice.

▪️Take 4 bone-in pork chops out of the fridge 20 minutes before cooking. Pat them very dry
and season both sides with salt and pepper.
▪️Peel 2 lb Yukon Gold potatoes and cut into 1-inch chunks. Place in a pot, cover with cold
salted water, and bring to a boil.
▪️Cook the potatoes for 18–20 minutes, until easily pierced with a fork. Drain and return to the
pot.
▪️Heat 4 minced garlic cloves in 4 tablespoons butter over low heat for 2 minutes — don't let it
brown.
▪️Pour the garlic butter and 1⁄2 cup warm milk over the potatoes. Mash to your preferred
texture; season generously with salt and pepper. Keep warm.
▪️Heat 2 tablespoons neutral oil in a large skillet over medium-high heat until shimmering.
▪️Sear the pork chops for 4 minutes on the first side without moving them.
▪️Flip and cook for another 3–4 minutes, until the internal temperature reads 145°F (63°C).
Transfer to a plate to rest.
▪️Pour off any excess fat from the skillet. Add 1 cup apple cider and 2 sprigs fresh thyme;
scrape up the browned bits.
▪️Simmer for 5 minutes until reduced by half. Off the heat, whisk in 1 tablespoon cold butter
for shine.
▪️Plate the chops over the garlic mashed potatoes and spoon the cider sauce over the top.
