It's snowing again this morning on Behm Mountain. Hopefully, you're more excited about that than I am :) Many of you have met my dog Peanut, here's a picture of his feelings on the weather this morning. Stay warm and snuggle!

This week's sweet bread is for all the chocolate and coffee lovers. It's a dark chocolate bread that's rich and delicious. The guests said it's definitely a recipe to make again.

Mocha Nut Bread
2 cups all-purpose flour
1 cup sugar
1/2 cup unsweet cocoa
1/4 cup instant coffee granules
1/2 tsp baking soda
1/4 tsp salt
2 eggs
1-1/4 cup sour cream
1/3 cup butter, melted
1 cup semisweet chocolate chips
1/2 cup chopped pecans
In a large bowl, combine the flour, sugar, cocoa, coffee granules, baking soda and salt. In another bowl, beat eggs, sour cream and butter until smooth. Stir into dry ingredients just until moistened. Fold in chocolate chips and pecans. Pour into a greased 9x5x13 loaf pan. Bake at 350 for 55- 60 minutes or until toothpick comes out clean. Cool 10 minutes, before removing from pan.

It's been exciting on Behm Mountain. We've had to reschedule a few guests because of the snow storm, but thanks to our great Brush Creek township trustees our road was cleared quickly. Our visitors brought their snow shoes and walked the paths around the property and have been enjoying the fireplaces. The biggest news is Cora the cow had her calf, her name is Freya. She's been keeping warm in the barn and looking cute. Enjoy the picure recap!

Merry Christmas, we hope everyone has a blessed season! We are thankful for our guests and all the great friends we've made at the cabins. We had an empty nest this morning, so we hiked a few miles on the Buckeye Trail and then headed back to Behm Mountain for an afternoon of yummy food 😋

Guests arriving this week will enjoy my friend Vonda's chocolate chip cookie recipe. I make these frequently because they're fast and easy.

We had an exciting weekend, because the frost flowers made their annual appearance. The flowers appear when it's below freezing at night, then warms up during the day. The freezing causes the stem of the plant to bust and it oozes out water that freezes like an ice ribbon.

Enjoy the cookies and pictures!
2 1/2 c flour
1 heaping tsp baking soda
1/2 tsp salt
Wisk together and set aside

1 stick butter at room temperature
2 c packed light brown sugar
Beat until light and fluffy

Add 2 eggs, beat until blended. Add 1 1/2 tsp vanilla, blend. Mix in flour mixture.
Add 1 1/2 c chocolate chips (semisweet chips are good too)
Line baking sheet with parchment paper, drop large spoonfuls onto sheet, don't flatten dough. Bake 350 10 to 12 minutes, until lightly brown.

I hope everyone had a great Thanksgiving! We spent the day with family and eating way too much. Our guests staying at the cabins for the holiday enjoyed Pumpkin Streusel Muffins
1 3/4 c all-purpose flour
1/2 c sugar
3 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1 egg
1/2 c milk
1/2 c canned pumpkin
1/3 c veg. oil
1 3oz. pack cream cheese, cut into 12 cubes
STREUSEL
1/4 c packed brown sugar
1/2 tsp cinnamon
1Tbs cold butter
1/4 c finely chopped nuts
In a large bowl, combine the flour, sugar, baking powder, cinnamon, salt, nutmeg. In another bowl, beat the egg, milk, pumpkin and oil. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups 1/4 full. Place one cream cheese cube in the center of each muffin; top with remaining batter. In small bowl combine brown sugar and cinnamon; cut in butter until mixture resembles coarse crumbs. Add nuts, sprinkle over batter. Bake at 400 for 18-22 minutes until a toothpick comes out clean. Cool for 5 minutes then move to wire rack. Yields 1 dozen

I've had several guests ask me to post the recipes of the goodies I leave in the cabins. Each week I'll try to post the recipe I'm currently making. Today's recipe is from Grace Young, a lady I used to go to church with when I was little. She is a fantastic cook, I use many of her recipes. So for Thanksgiving here's her
Cranberry Coffee Cake
4 eggs
1 1/2 cups butter, melted
3 cups sugar
2 tsp. almond extract
3 cups flour
1 cup pecans, chopped
1 (12 oz) bag cranberries, slightly chopped
Cream together eggs, butter and sugar. Add almond extract and flour. Stir in pecans and cranberries. Batter will be stiff. Grease and flour or use cooking spray on a 9x13 pan, bake for 1 hour at 350 or two 8" loaf pans bake at 350 for 55 minutes.
