Need a dinner idea for tonight?

Noffke's Weekly Recipe!

Lemon Garlic Shrimp pasta:

Ingredients-
- 8 ounces Linguine
- 2 Tbsp. Olive Oil
- 8 tablespoons
- Unsalted Butter (1 stick)
- 4 cloves Garlic (minced)
- 1 Tsp. Red Pepper Flakes
- 1 ¼ pounds Large Shrimp
- add Salt
- add Pepper
- 1 Tsp. Dried Oregano
- 4 cups Baby Spinach
- ¼ cup -Parmesan Cheese (grated)
- 2 Tbsp. Fresh Parsley (chopped)
- 1 Tbsp. Lemon Juice

Directions:
1) In a large pot, boil water and add pasta. Cook (stirring frequently) until al dente. Drain and set pasta aside.
2) Heat olive oil and 2 tablespoons of butter in the same pan. Add garlic and crushed red pepper, and cook until fragrant.
3) Toss in shrimp, salt and pepper to taste, and stir until shrimp start to turn pink but are not fully cooked.
4) Add oregano and spinach, and cook, until wilted.
5) Return cooked pasta to the pot; add remaining butter, parmesan, and parsley. Stir until well mixed, and the butter is melted.
6) When the shrimp are cooked, add lemon juice, mix once more, then serve while hot.

Noffke's Sunday Recipe (Healthy Version)!

Zucchini Pizza Bites:

Ingredients-
- 1 Large Zucchini (about 11 ounces, cut diagonally into 1/4-inch slices)
- Sprinkle of Salt
- Sprinkle of Pepper
- ⅓ cup Pizza Sauce
- ¾ cup Part-Skim Mozzarella Cheese (shredded)
- ½ cup Miniature Pepperoni (slices)
- Fresh Basil (minced)

Directions:
1) Slice zucchini into 1/4 inch slices.
2) Arrange & broil zucchini on a greased baking sheet for 1-2 minutes per side.
3) Sprinkle zucchini with salt & pepper; Top each zucchini with sauce, cheese & mini pepperoni.
4) Broil again for about one minute until cheese is melted.
7) Sprinkle Basil.
8) Enjoy!

Noffkes Football Sunday recipe!

Sausage cream cheese Crescents:

Ingredients-
- 1 Pound Ground Sausage (mild or hot)
- 8 Oz Softened Cream Cheese
- 1 small yellow Onion (finely diced)
- 2 Jalapeno Peppers (Seeds removed, optional)
- 2 packages of Crescent Rolls

Directions-
1. Preheat oven to 375 degrees.
2. Cook the ground sausage until browned, and drain all the excess oil from the sausage.
3. Dice the onion & jalapenos.
4. Combine the softened cream cheese with cooked sausage, onion & jalepenos.
5. Place a tbsp. Of the cream cheese & sausage mixture towards the wider end of the crescent roll, roll as instructed on the back of the crescent roll can.
6. Bake in the oven for about 11-13 minutes or until golden brown.
7. Cool on a baking rack & serve!

Noffkes FIRST Monday housing tip of the year!

Cleaning Refrigerator coils:

What is a Refrigerator Coil?
They are the thin tubes mounted beneath your refrigerator or on the back. Refrigerator condenser coils house the refrigerant that cools the air in your fridge. They are there to cool down and condense the refrigerant from a gas into a liquid.

Why?
Because Refrigerators work harder when they have dusty, grimey condenser coils. Keeping this clean will help your monthly energy bill by 12% on average. Cleaning a refrigerator’s condenser coils is the most important thing you can do to maintain a refrigerator and keep it running efficiently.

When?
It is recommended that you clean your Refrigerator coils once a year. If you have pets, two or three times a year is best.

How?
You can handle this task yourself, with a piece of cardboard, a vacuum with wand attachment & a long thin brush. Unplug the Refrigerator, remove the grill & vacuum any loose dust under or behind the fridge. Gently brush the coils & then click the grill back into place. Thats it! This should take roughly only 10-15 minutes.

If your fridge has been lagging or not working properly, it may just need to be cleaned. Try this before buying a new fridge!
