Making these delish Chocolate Peppermint Mini Loafs this weekend!

Mini Loaf Ingredients:
4 eggs
1/4 melted coconut oil - cooled
1/2 cup maple syrup
1 tsp peppermint extract
3/4 cup unsweetened cocoa powder
1 cup almond flour
1 tsp salt
2 tsp baking powder
Icing Ingredients:
4oz cream cheese - softened
1.5 cup powdered sugar
1/2 tsp vanilla extract

Directions:
Preheat oven to 350F and place your loaf mold on a study baking tray
Whisk together eggs, oil, maple syrup and peppermint extract
In a separate bowl combine cocoa powder, almond flour, salt and baking powder
Slowly fold dry ingredients into wet with a spatula
Pour about 1/4 of batter into each of 8 mini loaf slots
Bake at 350F for 20 minutes
While the mini loafs bake prepare the frosting by mixing the ingredients together with a hand mixer
Remove the loaves from the oven, allow them to cook, pop out of their molds and continue cooling on a rack
Decorate when fully cooled and enjoy! Thank you Madeline at Mad about Food.
