Feta-Parmesan Roasted Stuffed Dates

Ingredients:
10 ounces pitted Medjool dates, sliced open on one side
Honey, for drizzling
3 ounces feta cheese, sliced into 1-inch pieces
3/4 cup shredded Parmesan cheese
1/3 cup walnuts, finely chopped
1 tablespoon rosemary, finely chopped
2 tablespoons scallions
2 tablespoons chopped parsley (or arugula)
1 1/2 teaspoons olive oil
1 1/2 teaspoons honey
1 teaspoon orange zest
1/4 teaspoon salt
Pepper, to taste

Directions:
Preheat the oven to 375°F.
In a bowl, combine walnuts, rosemary, scallions, parsley, olive oil, honey, orange zest, salt, and pepper.
In a separate bowl, place honey, and on a small plate, add shredded Parmesan.
Dip each piece of feta in honey, then coat with Parmesan.
Stuff each date with the coated feta.
Arrange stuffed dates in a casserole dish and sprinkle with the prepared topping.
Bake for 15 minutes until the dates are warm and the topping is golden.
Remove from the oven, drizzle with honey, and serve warm.

"As I was looking on Facebook, I saw the ad for this dog. Phobic, brutally abused, eating wood and tied up in a yard. His man wanted him "wild" to scare the thieves!!... After the death of my dog that we were together for 17 years and while I had said I would not get another animal, today he came into my life. As soon as I put him in the car he sat on my son's lap and fell asleep. I took this picture to share and show how much all creatures need love.... How much did he need that hug?! From today on we are family... Let's go home! "

This is my youngest daughter - she’s 14. This is her second year working a summer job. She decided where she wanted to work and walked in a resume. They didn’t call. So she called them, twice. Then went in to see if they had looked at the resumes yet. They hadn’t. They asked her if she had time now to do an interview. She said “yes”.

She got the job.

She works whatever shift they want. She posted a sign on the employee bulletin board telling co-workers if they want a day off she’s happy to help.

She cleans dishes and toilets. Takes out garbage and mops the floor. Waits on customers and manages money. She makes fancy coffees and smoothies.

It’s not glamorous- but she’s saving 70% of what she makes to become a doctor. The other 30% is going towards a computer and time with her friends.

She’s leaning in. She’s putting the work in. She impresses me.
