Did you know????

Eggplant is a fruit. It's considered a berry, and related to tomato & potato? 🤔

Eggplant can be difficult for some - maybe a texture thing/not particularly fond of the taste (or lack thereof).

My mom always did an awesome job, preparing eggplant dishes for us😊

For this particular eggplant parmesan recipe (with parmesan chicken cutlets) I did not have any pasta/marinara sauce on-hand. I used fresh tomatoes (from my garden).

Easy & quite tasty! Leftovers = uber delish!

Plants/flowers add vibrant color and warmth to spaces. Think outside the box when considering them for your spaces. These wildflowers were placed in hanging baskets, rather than inground. The results are beautifully ah-mazin!

Memories
Yesterday would have been my mom's 81st birthday. We miss her terribly! She was an awesome cook, and her love for food was reflected in her tasty/colorful presentations, we so eagerly/happily devoured.

In no way do I equate my level of cooking to my mom's🥰 But this simple and colorful dish lovingly reminded me of her. Today, that memory made smile.

Creating spaces that allow you to live the life you desire....

She loves to paint, and I get to spend time/make memories with this creative, beautiful, & energetic baby girl.

When doing creative projects, consider repurposing something you already have. It keeps cost down, helps to expedite the process, and also allows you to enjoy your creativity🥰

For our project we used an old window blind. Our art-work is now part of our creative outdoor space.....

Covid-19 has forced us to rethink the way we do life. While none of us know exactly what life Post-Covid will look like, most of us will probably make changes on some level.
Covid has forced me to deeply ponder the food supply chain, availability of food, and immediate survival needs.
What are my immediate needs? What am I able to do to feed myself? These are valid questions, since instances prevail, where money is endless, but product is lacking.
I decided to expand my container garden, and set out to plant everything space would allow. What I cannot eat, will be shared with my community.

Kale, broccoli, lettuce, swiss chard, cauliflower, purple cabbage, tomatoes, chives, parsley, lavender, rosemary, spinach....
