Classic Apple Pie Recipe
Ingredients:
For the Crust:
2 ½ cups all-purpose flour
1 teaspoon salt
1 cup (2 sticks) unsalted butter, very cold and cut into ½-inch cubes
½ cup ice water (or more, if needed)
For the Filling:
6-8 medium apples (Granny Smith, Honeycrisp, or Braeburn work best), peeled, cored, and sliced ¼-inch thick (about 6-7 cups)
½ cup granulated sugar (adjust to apple sweetness)
¼ cup packed light brown sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves (optional)
2 tablespoons all-purpose flour or cornstarch (for thickening)
1 tablespoon lemon juice
2 tablespoons unsalted butter, cut into small pieces
For Assembly:
1 large egg, beaten (for egg wash)
1 tablespoon coarse sugar (for sprinkling)
Instructions:
Make the Pie Dough: In a large bowl, whisk together flour and salt. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse meal with some pea-sized butter pieces. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Divide dough in half, flatten into discs, wrap in plastic, and chill for at least 30 minutes.
Prepare the Filling: In a large bowl, combine sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, cloves (if using), flour/cornstarch, and lemon juice. Toss gently to coat.
Assemble the Pie:
Preheat oven to 425°F (220°C).
On a lightly floured surface, roll out one disc of dough into a 12-inch circle. Carefully transfer to a 9-inch pie plate. Trim edges, leaving a ½-inch overhang.
Pour the apple filling into the pie crust, mounding it slightly in the center. Dot the top with the small pieces of butter.
Roll out the second disc of dough. You can either place it directly over the filling (trimming and crimping the edges), or cut it into ½-inch wide strips to create a lattice top.
If making a lattice, weave the strips over and under, then trim and crimp the edges with the bottom crust.
Bake the Pie: Brush the top crust with egg wash and sprinkle with coarse sugar. Place the pie on a baking sheet (to catch any drips).
Bake for 15 minutes at 425°F (220°C).
Reduce oven temperature to 375°F (190°C) and continue baking for 35-45 minutes, or until the crust is golden brown and the filling is bubbling. If the crust browns too quickly, loosely tent with foil.
Cool: Let the pie cool completely on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly.
