Before the pandemic, most people did not know what a ghost kitchen was. Now they are becoming more popular among both start-up and well-established restaurants. Wendy's announced they will be opening 700 ghost kitchen locations in the U.S., Canada and U.K. by 2025. This concept it great for start-up because they require less square footage and you do not have to worry about parking requirements. Even before the pandemic hit, the National Restaurant Association forecasted that off-premise sales such as drive-thru, carryout, delivery and mobile-ordering would be the bulk of industry growth over the next decade. It’s safe to say that Covid accelerated that growth. Restaurants that you would not normally associate with a drive-thru, such as Applebee's Grill & Bar, are now testing the concept. The pandemic showed retailers that the going by the “old ways” are not enough to survive in modern day. Both retail centers and shopping malls are seeing business return to pre-Covid levels. Kimco, which owns retail centers across the country, has said foot traffic is back at their retail centers while mall owner Simon Property Group has seen their sales bounce back to levels comparable to the same period in 2019. This is great news for both landlords and tenants. Consumers are back to shopping and landlords are able to fill up their centers.
