Gluten-Free Pumpkin Muffins!

Ingredients:
- 1 cup gluten-free all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 cup canned pumpkin purée
- 1 teaspoon vanilla extract
- 1/2 cup walnuts or pecans, chopped (optional)
- 1/2 cup chocolate chips (optional)

Instructions:

1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

2. Mix Dry Ingredients: In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

3. Combine Wet Ingredients: In a large bowl, mix the granulated sugar, brown sugar, oil, eggs, pumpkin purée, and vanilla extract until well combined.

4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the chopped nuts and chocolate chips.

5. Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full.

6. Bake: Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool and Serve: Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Perfect for those nights when everyone's schedule seems to be going in a different direction.

Ingredients

1½ lbs boneless, skinless chicken breasts
1 cup salsa
1 can black beans, drained and rinsed
1 cup frozen corn
1 can diced tomatoes with green chiles, drained
1 packet certified gluten-free taco seasoning
½ cup gluten-free chicken broth
Juice of 1 lime

For serving

Cooked rice
Shredded cheese
Avocado
Sour cream
Cilantro
Lime wedges
Crushed certified gluten-free tortilla chips

Instructions

Place the chicken in the crockpot and add the salsa, black beans, corn, tomatoes, taco seasoning, and broth.

Cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken reaches 165°F.

Shred the chicken directly in the crockpot, stir everything together, and add the lime juice.

Serve over rice and let everyone add their favorite toppings.

September dinner bonus: Make extra—the leftovers are great for lunches, nachos, salads, or stuffed baked potatoes the next day.
