Countryside Baked Corn
(This is a great way to use creamed corn)
2 Cups Creamed Corn
1/2 Cup Oil (vegetable or olive)
2 Beaten Eggs
1/2 Cup White Corn Meal
3/4 Teaspoon Garlic Salt
1 Cup Grated Cheese
2 Jalapeno Peppers (diced) (less if you prefer a milder taste)
Mix all together and pour into a greased casserole dish. Bake at 350 degrees until knife comes out clean.

Green Enchiladas
1 pound ground beef
1 medium size onion
1 can cream of mushroom soup
1 can cream of chicken soup
1 can mild enchilada sauce
1 small can green chilis
2 cups shredded cheddar cheese
Corn tortillas
Brown meat and onion together. Drain fat. Add all other ingredients except cheese and tortillas to the meat mixture. Mix well. Line bottom of 9 x 13 pan with tortillas. Spread one-half of meat mixture over tortillas and sprinkle with one-half of cheese. Put a layer of tortillas over this and cover them with the other half of the meat mixture and sprinkle the other half of cheese over this.
Bake for 25 minutes at 350 degrees.

One of the ladies who worked for me had been a missionary in Mexico for fifteen years. She was a fabulous cook for Mexican cuisine. This was one of her recipes.

Countryside Chocolate Mousse
Heat 2 cups milk
Separate 3 eggs
Mix 3 egg yolks, 3/4 cup sugar, 3 tablespoons flour, 3 tablespoons cocoa, a pinch of salt and a little milk. Stir to make a smooth paste.
Add to heated milk and heat to boiling until pudding thickens.
Remove from heat and add 1 teaspoon vanilla flavoring.
Cool pudding completely.
Make a meringue with the 3 egg whites--beat egg whites until they form peaks--add sugar, a pinch of salt and 1/4 teaspoon cream of tartar. Fold the meringue into the cooled pudding.
This is a dessert you can serve in an elegant way by using dessert dishes or just letting everyone dip his/her own from a bowl.
Guests will love it!

Countryside Spaghetti Salad
1 pound uncooked spaghetti
1 whole bunch celery
2 medium green bell peppers
1 bunch green onions
1 small jar chopped pimentos
1 pint mayonnaise (I use Hellman's)
3 scant tablespoons garlic salt
5 ounces parmesan cheese
Cook spaghetti with a little salt and oil until done. Let cool completely. Mix all other ingredients together and mix with spaghetti. This makes enough for a large group. You can use less of the vegetables if you like. You can also make half as much and have a nice-sized salad.
We always served at least 12 salads on our buffets and this was a favorite of our customers.

Countryside 3-Bean Salad
2 Cans Green Beans
2 Cans Yellow Wax Beans
2 Cans Red Kidney Beans
1 Green Bell Pepper
1/4 Onion
3 Stalks Celery
Drain beans
Chop pepper, onion and celery and mix with the beans
Dressing:
3/4 Cup Vinegar
3/4 Cup Sugar
1/2 Cup Cooking Oil
1/8 Teaspoon Salt
1/8 Teaspoon Pepper
Mix dressing ingredients in a small saucepan and heat until sugar is dissolved.
After dressing has cooled, pour it over the bean mixture and stir well. Great for a picnic or any family gathering!

Countryside Coconut Pie
Use any pie crust...make your own, or buy a frozen one. Bake crust.
Make the following pudding:
Heat 2 cups milk
Separate 3 eggs
Mix together 3 egg yolks, 2/3 cup sugar, 3 tablespoons flour and a little of the heated milk to make a smooth paste
Add this mixture to the milk and bring to boil until pudding thickens
Add 1 teaspoon vanilla flavoring and 3/4 cup coconut
Put this into baked pie crust
Make meringue for top of pie:
3 egg whites, pinch of salt, 1/4 teaspoon cream of tartar, about 6 tablespoons sugar
Whip egg whites with salt on low mixer speed until they are fluffy
Increase speed of mixer and add cream of tartar
Add the sugar a little at a time until peaks form
Spoon the meringue on to the hot pie and place in oven with medium heat until top is browned.
NOTE: You can use the above pudding recipe for any cream pie...chocolate, banana, etc.; but coconut was always the favorite in my diner! An Awesome Dessert!

Cole Slaw
2 1/2 pounds cabbage, finely shredded
1/4 pound grated carrots
Dressing:
2 cups Miracle Whip
1/3 cup sugar
2 tablespoons Milnot
1 1/2 tablespoons vinegar
1 teaspoon celery salt
1 teaspoon onion salt

This recipe was created by Gloria Johnson (a fabulous cook!)
In the past few years, I've become lazy and got my cabbage in a bag in the store! Still...soooo good!

Countryside Seasoned Oven Potatoes
Use red potatoes if possible
Clean well and cut into bite-sized pieces (leave skin on)
Layer in any baking dish--
Potatoes, margarine or butter, salt and pepper, garlic salt, Lawry's Seasoned Salt (these should be to your taste)
Bake in 400 degree oven uncovered until they are just about done-then cover for the remainder of the time until they are completely done.
The great thing is--you can make as many or as few as you need.

Countryside Bar-B-Que Sauce for Ribs
4 Cups Pancake Syrup
4 Cups Catsup
1 Cup Vinegar
1/2 Cup Worcestershire Sauce
8 Teaspoons Onion Salt
8 Teaspoons Chili Powder
8 Teaspoons Dry Mustard
1 1/2 Cups Brown Sugar
This one is too easy! Just mix it all together until it is very smooth. Do not cook!
You can boil your ribs with salt or grill them until they are done. Let them cool and then dip them in the sauce. Then bake uncovered at about 325 degrees until they fall off the bone. If you think they are getting too brown, you can reduce heat or cover with aluminum foil.
YUMMM!

Countryside Bar-B-Que Sauce
2 Cups Brown Sugar
2 Cups Catsup
2 Cups Water
1/3 Cup Worcestershire Sauce
1/3 Cup Vinegar
8 Teaspoons Chili Powder
3 Teaspoons Paprika
8 Teaspoons Dried Onion Flakes
Sprinkle in Salt and Pepper

Mix all together and bring to boil. Boil until it starts to thicken.

This is great on beef, or any kind of meat.
This keeps really well in the refrigerator.
