Belgian sugar pie
For yeast dough:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 ยผ tablespoons dry yeast
- 1 teaspoon salt
- 1 large egg
- 1/3 cup milk
- 1.75 oz butter For garniture:
- 3 large eggs
- 2/3 cup heavy cream
- 1 ยผ to 2 cups granulated sugar
- Butter
Preheat the oven at 400ยบF.
In the bowl of a stand mixer fitted with the dough hook, combine the flour, salt, sugar, egg, and yeast dissolved in lukewarm milk. Mix until a smooth dough forms, then add the softened butter and continue mixing until the dough comes together in a ball and pulls away from the sides of the bowl.
Transfer the dough to a work surface and roll it out. Line a tart pan with the dough, pressing it gently into the pan with your fingertips to ensure it adheres perfectly to the sides.
In a separate bowl, whisk the eggs. Brush the edges of the tart shell with the egg wash.
Add the cream to the eggs and whisk again.
Sprinkle the sugar over the dough and dot with small pieces of butter.
Pour the egg-cream mixture over the top.
Bake for approximately 25 minutes.
The tart can be enjoyed warm or cold.
