This is the perfect appetizer that your guests are sure to devour!
Queso fundido:
• 1 tsp vegetable oil
• ½ c. yellow onion, minced
• 1 garlic clove, minced
• 1 poblano pepper, seeded and chopped (reserve some for topping)
• 4 oz fresh pork chorizo sausage, casing removed
• 1 tbsp all-purpose flour
• 1 c. cheddar cheese, shredded
• 1 c. Monterey jack cheese, shredded
• ¾ c. Mexican style l***r b**r
Toppings:
• ¾ c. roma tomatoes, chopped
• ¼ c. red onion, peeled and minced
• ¼ c. queso fresco cheese, crumbled
• 1½ tbsp fresh cilantro, chopped
• Tortilla chips, for serving
Instructions:
1. Heat oil in a large cast iron skillet over medium-high heat. Sauté onions, garlic, and peppers for 2 minutes. Crumble in the sausage, and continue to sauté for 5 minutes or until sausage is cooked completely.
2. In a large bowl, toss flour with cheddar and Monterey jack, until coated.
3. Pour b**r into the skillet to deglaze, making sure to scrape the bottom of the pan to get all the tasty brown bits. Whisk in cheese, a handful at a time, until melted and smooth. Reduce heat to low, and allow to simmer for 5 minutes, stirring frequently.
4. When ready to serve, top hot (and still simmering) queso with tomatoes, onion, queso fresco cheese, and cilantro. Serve with tortilla chips for dipping.
