Frozen Peanut Butter Greek Yogurt Cookie Dough Bites with Chocolate Shell
These creamy frozen bites taste just like peanut butter cookie dough wrapped in a smooth dark chocolate shell. Made with Greek yogurt for a soft texture and balanced sweetness, they’re the perfect no-bake treat with a rich chocolate finish and cookie dough center.
Ingredients
Cookie Dough Filling
• 1/2 cup plain Greek yogurt
• 1/4 cup creamy peanut butter
• 2 tablespoons honey or maple syrup
• 1/2 cup oat flour
• 2 tablespoons mini chocolate chips
• 1/2 teaspoon vanilla extract
Chocolate Coating
• 1/4 cup dark chocolate chips, melted
• 1 teaspoon coconut oil (optional, for smoother coating)
Instructions
Prepare the Cookie Dough
In a bowl, mix Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract until smooth and creamy.
Add the Dry Ingredients
Stir in the oat flour and mini chocolate chips. Mix until a thick cookie dough texture forms.
Shape the Bites
Scoop about 1 tablespoon of the mixture and roll into small round discs or balls. Place them on a parchment-lined tray.
Freeze
Freeze the bites for about 45–60 minutes until firm.
Add the Chocolate Shell
Melt the dark chocolate chips with coconut oil until smooth. Spoon or dip the top of each frozen bite into the melted chocolate.
Decorate
Sprinkle a few extra mini chocolate chips on top while the chocolate is still soft.
Final Freeze
Return the bites to the freezer for another 10–15 minutes until the chocolate shell fully sets.
Serve
