Protein pumpkin balls🎃👻
Ingredients
¼ cup pumpkin purée
1 cup creamy peanut butter
¼ cup pure maple syrup
4 tablespoons almond flour
1 tablespoon pumpkin pie spice
1 scoop of vanilla protein
Dark chocolate, for melting and dipping
Instructions
1. Mix the wet ingredients. In a medium bowl, combine the pumpkin purée, peanut butter, and maple syrup until smooth.
2. Add the dry ingredients. Stir in the almond flour and pumpkin pie spice until everything is well combined.
3. Chill the mixture. Refrigerate for 20–30 minutes to help it firm up.
4. Roll into balls. Scoop and roll the mixture into bite-sized balls. If the mixture is too sticky, add a little more almond flour.
5. Melt the chocolate. Microwave the dark chocolate in 20–30-second intervals, stirring until smooth.
6. Dip the pumpkin balls. Coat each ball in melted chocolate and place on a parchment-lined tray.
7. Let them set. Refrigerate for 15–20 minutes or until the chocolate hardens.
8. Enjoy! Store in an airtight container in the refrigerator for up to 5 days.
