Stir-Fried Rice Noodles with Jumbo Shrimp
Marinade Ingredients:
* 6 jumbo shrimp, peeled and deveined
* 1 teaspoon salt
* 1 teaspoon black pepper
* 2 teaspoon cornstarch
* 2 teaspoon oil
Cooking Ingredients:
* Half package (approximately 8 oz) of dry rice noodles
* 1 tablespoon oil (for cooking the shrimp)
* 1/2 tablespoon minced garlic
* 1 egg, beaten
* 1/2 tablespoon soy sauce
* 1/2 tablespoon fish sauce
* 1 tablespoon oyster sauce
* 2 cups bean sprouts
* 1 cup scallions (chopped)
* Fresh cilantro and lime wedges (for garnish)
Instructions:
* In a bowl, combine the peeled and deveined jumbo shrimp with salt, black pepper, cornstarch, and oil. Mix well to ensure the shrimp is evenly coated with the marinade. Set the marinated shrimp aside.
* Boil the dry rice noodles in a pot of water for 6 minutes (or see instructions) until they are just cooked. Drain and rinse the noodles with cold water. Set them aside.
* Heat a cooking pan over medium heat and add 1 tablespoon of oil. Once the oil is hot, add the minced garlic and sauté until fragrant.
* Add the marinated shrimp to the pan and stir-fry for about 1 minute on each side until they turn pink and are cooked through. Remove the cooked shrimp from the pan and set them aside.
* In the same pan, add another 1 tablespoon of oil, and then pour in the beaten egg. Cook the egg until it's fully cooked.
* Add the cooked rice noodles to the pan and continue to stir-fry for a few minutes to heat the noodles through.
* Pour the soy sauce, fish sauce, and oyster sauce over the noodles, and mix everything well until the sauces are evenly distributed.
* Once the noodles are well-coated with the sauces, add the cooked shrimp, bean sprouts, and cut scallions to the pan. Stir-fry everything together for another minute until all the ingredients are combined and heated through.
* Transfer the stir-fried rice noodles with jumbo shrimp to a serving plate.
* Garnish the dish with fresh cilantro and lime wedges on the side.
