Pina Colada Pound Cake

Ingredients:

For the Cake:
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 teaspoon coconut extract
3 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup sour cream
1 cup crushed pineapple, drained
½ cup shredded coconut (sweetened or unsweetened)

For the Glaze:
1 cup powdered sugar
2-3 tablespoons pineapple juice (adjust for desired consistency)
1 teaspoon coconut extract (optional)

Instructions:

1. Prepare the oven:
Preheat the oven to 325°F (163°C). Grease and flour a 10-inch bundt pan or tube pan.

2. Make the pound cake batter:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
Add the eggs one at a time, beating well after each addition.
Stir in the vanilla extract and coconut extract until combined.
In another bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Start and end with the dry ingredients. Mix until just combined.
Gently fold in the drained crushed pineapple and shredded coconut until evenly distributed.

3. Bake the cake:
Pour the batter into the prepared bundt pan and smooth the top.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10-15 minutes before inverting it onto a wire rack to cool completely.

4. Make the glaze:
In a small bowl, whisk together the powdered sugar and pineapple juice until smooth. Add coconut extract if desired for extra flavor. Adjust the consistency with more juice or powdered sugar as needed.

5. Glaze the cake:
Once the cake has cooled completely, drizzle the glaze over the top. Allow the glaze to set before slicing and serving.

Serving Suggestions:
Serve your Pina Colada Pound Cake with a dollop of whipped cream and a sprinkle of toasted coconut for added tropical flair.
This cake is perfect for summer gatherings, parties, or as a delightful dessert anytime you want a taste of the tropics!
