During the summer, when the days are long and the bugs are plentiful, our chickens are usually producing an abundance of eggs. Instead of letting those extra eggs go to waste, I freeze some for the winter months.

I simply crack the eggs, gently mix them together, and freeze them in either glass jars or Ziploc bags in portions that work best for my family.

It’s a simple way to preserve the abundance of summer and enjoy farm-fresh eggs even when winter production is down.
